Ingredients
  

For the Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
For the Filling
  • 4 packages (8 ounce) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, 1/2 cup sugar, and melted butter until well combined. Press firmly into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat together the softened cream cheese, 1 cup sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the prepared crust.
Baking
  1. Bake for about 50-60 minutes, until the center is set but still slightly jiggly.
  2. Allow to cool to room temperature. Spread sour cream evenly over the top.
  3. Refrigerate for at least 4 hours, or overnight before serving.

Notes

To enhance the dessert, serve plain or topped with fresh berries or chocolate sauce. Store leftovers in the refrigerator for 5-7 days and can freeze for up to 3 months.
