Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs, 1/2 cup sugar, and melted butter until well combined. Press firmly into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat together the softened cream cheese, 1 cup sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the prepared crust.
Baking
- Bake for about 50-60 minutes, until the center is set but still slightly jiggly.
- Allow to cool to room temperature. Spread sour cream evenly over the top.
- Refrigerate for at least 4 hours, or overnight before serving.
Notes
To enhance the dessert, serve plain or topped with fresh berries or chocolate sauce. Store leftovers in the refrigerator for 5-7 days and can freeze for up to 3 months.
