  • 30 oz frozen hash brown potatoes Thawed if necessary
  • 2 cups shredded cheddar cheese Freshly shredded preferred
  • 10.5 oz cream of chicken soup Can substitute with ranch dressing or cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 small chopped onion Can sauté for more flavor
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine frozen hash browns, shredded cheddar cheese, cream of chicken soup, sour cream, melted butter, and chopped onions.
  3. Add salt and pepper to taste.
  4. Spread the mixture into a greased 9x13 inch casserole dish.
  5. Bake for 30 to 40 minutes until bubbly and golden brown.
  6. Let it cool for a few minutes before serving.

Notes

For success, use freshly shredded cheese and consider adding cooked bacon or green peppers for extra flavor. Store leftovers in the fridge for 3-5 days or freeze for up to 2 months.
