Preparation
- In a bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, combine the milk, eggs, melted butter, and vanilla.
- Pour the wet mixture into the dry ingredients and mix until just combined—lumps are perfectly fine!
Cooking
- Heat a non-stick skillet over medium heat and lightly grease it with butter.
- For each pancake, pour 1/4 cup of batter onto the skillet.
- Cook until you see bubbles forming on the surface, then flip and cook until golden brown on the other side.
- Serve warm, topped with fresh berries and a drizzle of maple syrup.
Notes
For the ultimate fluffy pancakes, don’t overmix the batter. Resting the batter for 5-10 minutes allows the baking powder to activate fully.
