- Cook the pasta according to the package instructions. Once cooked, drain and let it cool completely.
- In a large bowl, combine the cooked chicken, diced avocado, minced chipotle peppers, chopped cilantro, corn, garlic powder, diced red onion, chopped tomatoes, lime juice, mayonnaise, cooked pasta, black beans, pepper, salt, and cumin.
- Gently mix all the ingredients until well combined.
- Stir in sour cream to make the salad extra creamy.
- Chill the mixture in the refrigerator for at least 30 minutes before serving to allow the flavors to meld beautifully.
Notes
Serve garnished with fresh cilantro or topped with crushed tortilla chips for additional crunch. This salad pairs well with grilled veggies or a light green salad.
