  • 2 lb Ground beef Use lean ground beef for a healthier option.
  • 1/2 cup Bell pepper, finely chopped
  • 1 small Onion, finely chopped
  • 3 whole Egg
  • 1 cup Catsup Can add more for serving.
  • 1 tsp Mustard
  • 1/4 tsp Black pepper
  • 2 tbsp Brown sugar
  • 1 tsp Salt
  • 48 pieces Cracker, crushed Use any type of cracker.
  • 4 oz Colby cheese, shredded Can substitute with other cheeses.
  • 1/2 cup Milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, finely chopped bell pepper, finely chopped onion, eggs, catsup, mustard, black pepper, brown sugar, salt, crushed crackers, shredded Colby cheese, and milk.
  3. Mix well until all ingredients are thoroughly combined.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Bake in the preheated oven for about 1 hour, or until cooked through.
  6. Let it rest for 10-15 minutes before slicing. Serve warm with your favorite sides.

Notes

For a fun twist, consider serving with mashed potatoes, green beans, or a fresh salad. Leftovers can be stored tightly wrapped in the refrigerator for up to four days or frozen for later enjoyment. Allowing the meatloaf to rest before slicing will keep it juicy.
