Ingredients
  

For the Marinade
  • 2 pounds boneless, skinless chicken thighs You can substitute with chicken breasts, but thighs remain juicier.
  • 2 tablespoons olive oil
  • 2 tablespoons chipotle pepper in adobo sauce, minced Adjust the amount for extra spiciness.
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro, chopped (optional)

Method
 

Preparation
  1. In a large bowl, whisk together olive oil, minced chipotle pepper, cumin, paprika, garlic powder, onion powder, salt, black pepper, lime juice, and chopped cilantro.
  2. Add the chicken thighs to the bowl and coat them thoroughly with the marinade.
  3. Cover the bowl and refrigerate the chicken for at least 30 minutes; overnight for richer flavor is recommended.
Cooking
  1. Preheat your grill or a skillet over medium-high heat.
  2. Cook the marinated chicken for about 6-7 minutes on each side, until fully cooked, with an internal temperature of 165°F.
  3. Remove from heat, let it rest for a few minutes, then slice and serve.

Notes

For best results, marinate overnight and use a meat thermometer to ensure the chicken is cooked perfectly. Leftovers can be refrigerated for up to 3-4 days or frozen for up to 3 months.
