Preparation
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine graham cracker crumbs with melted butter and press into the bottom of the prepared pan to form the crust.
Making the Filling
- In another bowl, beat together cream cheese, granulated sugar, brown sugar, cinnamon, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition. Then fold in sour cream until combined.
Baking
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for about 60-70 minutes until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
Chilling
- Once cooled to room temperature, transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight before serving.
Notes
For best results, ensure cream cheese is softened to avoid lumps. You may use a water bath while baking to prevent cracking.
