Ingredients
  

For the crust
  • 1 cup Graham cracker crumbs
  • 1/2 cup Butter, melted
For the filling
  • 24 oz Cream cheese, softened Make sure it's at room temperature.
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 2 tsp Cinnamon
  • 2 tsp Vanilla extract
  • 4 large Eggs Added one at a time.
  • 1 cup Sour cream Can be substituted with Greek yogurt for a lighter version.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine graham cracker crumbs with melted butter and press into the bottom of the prepared pan to form the crust.
Making the Filling
  1. In another bowl, beat together cream cheese, granulated sugar, brown sugar, cinnamon, and vanilla extract until smooth.
  2. Add eggs one at a time, mixing well after each addition. Then fold in sour cream until combined.
Baking
  1. Pour the cream cheese mixture over the crust in the springform pan.
  2. Bake for about 60-70 minutes until the center is set but slightly jiggly.
  3. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
Chilling
  1. Once cooled to room temperature, transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight before serving.

Notes

For best results, ensure cream cheese is softened to avoid lumps. You may use a water bath while baking to prevent cracking.
