Ingredients
  

For the pancakes
  • 2 Bananas 2 Bananas Ripe bananas recommended for maximum sweetness.
  • 1 large 1 large Egg
  • 1 cup 1 cup All-purpose flour Can substitute with whole wheat or gluten-free flour.
  • 1 tsp 1 tsp Baking powder
  • 1 tsp 1 tsp Baking soda
  • 3 tbsp 3 tbsp Brown sugar For added depth of flavor, consider mixing with granulated sugar.
  • 1 tsp 1 tsp Cinnamon Add a pinch of nutmeg for extra spice if desired.
  • 2 tbsp 2 tbsp Granulated sugar
  • 1 pinch 1 pinch Salt
  • 1 tsp 1 tsp Vanilla extract
  • 4 tbsp 4 tbsp Butter Melted for the batter.
  • 1 cup 1 cup Buttermilk Can substitute with regular milk mixed with a tablespoon of vinegar.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish to prevent sticking.
  2. In a mixing bowl, mash the bananas until they’re smooth and creamy.
  3. Add the egg, buttermilk, and vanilla extract to the mashed bananas, mixing thoroughly.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, brown sugar, cinnamon, granulated sugar, and a pinch of salt.
  5. Combine the wet mixture with the dry ingredients, stirring gently until just combined. Be careful not to overmix!
  6. Melt the butter and gently fold it into the batter.
  7. Pour the batter into the prepared dish, spreading it evenly.
  8. Bake for 25-30 minutes, or until the pancakes are golden brown and a toothpick inserted comes out clean.
  9. Allow to cool slightly before serving. Enjoy every bite of your delightful pancakes!

Notes

Best served with a dusting of powdered sugar, a dollop of whipped cream, or a scoop of vanilla ice cream. Store leftovers in an airtight container for up to three days and reheat in the microwave or toaster.
