Preparation
- Preheat your oven to 350°F (175°C) and grease a baking dish to prevent sticking.
- In a mixing bowl, mash the bananas until they’re smooth and creamy.
- Add the egg, buttermilk, and vanilla extract to the mashed bananas, mixing thoroughly.
- In a separate bowl, whisk together the flour, baking powder, baking soda, brown sugar, cinnamon, granulated sugar, and a pinch of salt.
- Combine the wet mixture with the dry ingredients, stirring gently until just combined. Be careful not to overmix!
- Melt the butter and gently fold it into the batter.
- Pour the batter into the prepared dish, spreading it evenly.
- Bake for 25-30 minutes, or until the pancakes are golden brown and a toothpick inserted comes out clean.
