Ingredients

For the Crust
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
For the Filling
  • 4 packages (8 ounce) cream cheese, softened
  • 1 cup sugar
  • 3/4 cup sour cream
  • 3/4 cup heavy cream
  • 4 large eggs
  • 1 teaspoon vanilla extract

Method

Preparation
  1. Preheat your oven to 325°F (160°C), ensuring it’s ready for baking.
  2. In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth. Gradually add the sour cream, heavy cream, eggs, and vanilla extract, mixing until just combined.
  4. Pour the luxurious filling over the prepared crust in the springform pan, spreading it evenly.
Baking
  1. Bake in the preheated oven for about 60-70 minutes, checking for that slight wobble in the center, indicating it’s just set.
  2. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. This gentle cooling period helps prevent cracking.
Cooling and Serving
  1. Remove from the oven, cool the cheesecake on a wire rack, and refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

For best results, ensure your ingredients are at room temperature. To avoid cracks, use the gentle cooling method. For clean slices, use a hot knife.
