  • 2 tablespoons chipotle peppers in adobo sauce Use less for a milder flavor.
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh lime juice For added zest.
  • Chopped cilantro for garnish

Method
 

Preparation
  1. Combine the chipotle peppers, olive oil, paprika, garlic powder, onion powder, salt, and pepper in a bowl.
  2. Thoroughly coat the chicken breasts with the marinade mixture.
  3. Allow the chicken to marinate for at least 30 minutes.
Cooking
  1. Preheat your grill or skillet to medium-high heat.
  2. Place the chicken on the grill and cook for about 6-7 minutes per side, ensuring it reaches an internal temperature of 165°F.
  3. Once cooked, remove from heat and squeeze fresh lime juice over the chicken.
  4. Let it rest for a few minutes, then slice and garnish with chopped cilantro.

Notes

Consider serving Chipotle Chicken over rice, in tortillas, or alongside grilled vegetables. Perfect for meal prep and can be stored in the fridge for up to 3 days or frozen for up to 2 months.
